recipe time!

Bonded with friends from church over these cupcakes (and the yummies they also brought) last night :) It's one of my successful batches so I'm sharing the recipe with you! Disclaimer: recipe's not mine. I also just copied it from a recipe book and saved it in my almost-10-year-old recipe notebook :P

Banana Nut Cupcakes

1 1/4 all purpose flour
1 1/2 teaspoon baking powder
1/4 cup butter or margarine
1 cup sugar
1 egg
1 teaspoon vanilla
3 bananas
1/2 cup nuts (as of now, kids won't eat anything with nuts)
5 tablespoons milk

1. Preheat oven to 375°F Thoroughly grease muffin pans or use paper liners.
2. Sift the flour and baking powder into small bowl. Set aside.
3. With an electric mixer, cream the butter or margarine and sugar. Add egg and vanilla and beat until fluffy.  Mix in the bananas. Add nuts.
4. With the mixer on low speed, beat in the flour mixture alternately with milk. Spoon into pan.  Bake for 20 to 25 minutes until golden brown.
5.  Leave to cool in the pans for 10 minutes.

Try it! :)

Thankful Tuesday

What makes a great weekend?

  • a friend coming over for an unplanned bonding
  • a feel good movie marathon (like 2 weeks notice & definitely maybe)
  • a homemade dessert (or better yet, dessertsssss!)
  • 2 handsome boys impatiently checking the oven if the dessert Mommy bakes is ready *loooove it!*
  • a walk around the block with a macho man (lol!)
  • a quiet me-time in the bedroom with books, notebooks and pens, with the air-con on... while all the rest forgot you're there!
  • Holy Eucharist
  • not spending anything except for groceries
  • forgetting about exercise and just eat eat eat (uumm, I'm not so sure of this one)

....check to all the items on the list! Looks like we had a great weekend! Thank you Lord for giving us joy and contentment in things like these. Thank you Criste for the visit! Hanggang sa susunond =D

Easter Party! :)

Happy Easter!!!
Let us shout with joy today because our Saviour is risen!!!
{P.S.  Easter Vigil  and the whole Easter experience was awesome as usual. Will blog about it soon. We need to go to now for a swimming fun at Paul and Tim's place!}

banana cake and a sushi :)

Last week was a little bit too much for me, maybe. Five classes and a few more things-to-do in between. Most days I woke up earlier than usual, stayed up late to finish some work-related stuff. Feeling a little guilty for not giving my boys enough time. The good thing is... what I do is not regular so now I am enjoying a week just for myself and the boys before I hold my last class for this month which is on Sunday :)

Friday. I went home with colds and body ache. Feeling a bit stressed. So to relax, I ended up making a layout for my next class. Yeah, I get stressed of those things yet I tend to un-stress still doing the same things. Hahahaha.

Weekend was lazy. We went to East Coast which, for some reason I didn't like except that we took nice photos which made me think, all is well that ends well... Then some friends came over. JJ. Charlie. Shine and Ryan. Had some usual LQ with hubby (we always do right?). Watched TV a lot.  And prepared these...

banana cake ala Migs (he was watching the whole time
and announces to everybody he did the baking).

Sushi. They all loved it.
Well except Ryan who only ate 2. lol.

Vietnamese Noodles

Thank you my friend Min for sharing with me the recipe! Don't forget the "secret cube" you promised! =)

Cookin' With Chef Ci

My sister-in-law whose as lovely as me (char!) but cooks better than me (way way way better!) is going home tonight. Will surely miss her yummy luto...

some of the yum yum food she cooked for us!

Thanks dear Bing for the secrets and the tips you shared with me! Wishing you all the best! Mwah! =)

cake for lolamamang!

For Lolamamang's birthday, I made a half recipe of my orange chiffon cake with butter cream icing! Too bad BB was at work so pardon me for the not-so-fab photos. I used my cam and I think I didn't adjust the settings too well (was in a hurry yesterday for Word Celebration). But anyways, we had fun (and extra calories) with the cake. I finished 2 slices and felt guilty after hehehe.

Here's your cake Mader dear! I hope you had a blast yesterday.... wish we were there to celebrate with you. We miss you all!

victorious weekend!

... bacause Pacman won! yehey! It was really fun watching with BB, Kuya Ed and Din. What an awesome fight that was! I was rolling on floor laughing at BB's (literally) cold feet! lol! I miss my father... i just love watching boxing with him coz his excitement is too contagious!!!

...because eventhough I missed one scrapbooking event, a friend came to visit! Min, thank you for the brief but quality bonding with our kids. It's my turn next time :)

... because my 3 heroes, slept at one time on a Sunday afternoon which gave me time to do an experiment: leaftover cereal (that I've been setting aside, coz the bugoys don't like it. I don't like it either), 2 eggs, flour, sugar, vanilla, butter... bake for 2 mins) EASY! :)

... because the experiment was successful! yehey! BB even asked me to spare some for his baon today :)

... because we heard mass, and I loved the choir's oh so lively music.

... because after a great weekend, I am now ready to face this week's challenges... and VICTORIES! Thank You Lord for everything. May YOUR NAME BE GLORIFIED!!!

Thrifty Thursday: Bondings at Home

Hubby and I love parties! Present crisis cannot get in the way of our wanting to spend time with friends. We can still have fun even with the fact that money gets a little tight these days. How? Instead of going to clubs or restaurants, we do home bondings! We have been having a lot of that these days :)Here's one of the hubby's bondings with his flickr buddies...

halloween eve

Happy halloween! I really wonder why they don't celebrate it here where we are. Nevertheless, I want to celebrate it with my 3 boys! :) For starters... I made a halloween chocolate pudding from scratch :) just an experiment inspired from the pudding recipe i learned from my younger sister Che2.

I made use of what was in the fridge:
leftover choco cake
eggs
condensed milk
ovaltine
canola oil
salt
marshmallow

Hubby said yummy (napugos?hihi) but looked so hilarious! lol. It was supposed to be a skull, you know, but it turned out to be a...

handmade "devil and angel" headbands hehehe ... be right back!

trying my best :)
